They are often applied to the vehicle by a porter and the vehicles are not polished, nor are they prepped properly. The dealerships are selling the dream in hopes that you won’t go back, and even if you do, it costs them nothing to have their porters reapply a cheap product.

A good, high end ceramic coating should be purchased from a professional detailer, and you should expect to pay a premium price for a premium product.
